Je staat in de supermarkt, zin in iets gezonds, maar ook iets lekkers. Je grijpt naar een mooi stuk groente of fruit, maar\u2026 wacht even. <strong>Is die eigenlijk wel \u2018van bij ons\u2019?<\/strong> <strong>DOE DE CHECK!<\/strong><\/p>\n\n\n\n<p>In het kader van de groenten- en fruitcampagne <strong>\u201cIs het van bij ons? Check!\u201d<\/strong> kreeg ik een leuke opdracht van <strong><a href=\"https:\/\/www.lekkervanbijons.be\/ideeen-en-tips\/bewust-consumeren\"><em>Lekker van bij ons<\/em>:<\/a><\/strong> ga op zoek naar <strong>Belgische <\/strong>groenten en fruit in de supermarkt. Want ja, ook al ziet een groente er vers uit, dat betekent nog niet dat ze van Belgische bodem komt. En wist je dat het wettelijk verplicht is voor supermarkten om de <strong>oorsprong van groenten en fruit zichtbaar te tonen<\/strong>? <br>Een klein bordje, een sticker, een vlaggetje of een label vertelt je meteen of je met een Belgisch toppertje te maken hebt of niet.<\/p>\n\n\n\n<div style=\"height:44px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p><strong><em>\u201d Is het van bij ons? CHECK! <\/em><\/strong>\u201c<br><em>#DoeDeCheck<\/em><\/p>\n<\/blockquote>\n\n\n\n<div style=\"height:42px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>WAAROM KIEZEN VOOR LOKAAL?<\/strong><\/h2>\n\n\n\n<div style=\"height:34px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Door bewust te kiezen voor producten van bij ons steun je de Belgische landbouwers, verklein je je ecologische voetafdruk \u00e9n eet je supervers. Zo komt de populaire <strong>Pink Lady-appel<\/strong> bijvoorbeeld oorspronkelijk uit Australi\u00eb, terwijl de <strong>Jonagold<\/strong> 100% Belgisch is. En jawel: ook aubergines worden hier gekweekt! <br>Ik kreeg de opdracht om een lekker gerechtje te maken met<strong> aubergine!<\/strong><a href=\"https:\/\/www.instagram.com\/foodbysin\/\"> <em>(zie filmpje op Instagram)<\/em><\/a><br>En ja, hoor! Ik deed de check en dook met mijn Belgische aubergine de keuken in. De lente hangt in de lucht, de paasbrunch ligt achter ons, dus ik had zin in iets lichts, groentenrijk, maar toch comfortfoodwaardig. Het resultaat? Die vul je met een heerlijk mengsel van het zachte auberginevruchtvlees, gestoofde ui en verse spinazie. Daarbovenop komt een zalige mix van romige feta, gesmolten mozzarella en Parmezaan, afgewerkt met een krokant laagje panko voor die <strong>crunchy bite<\/strong>.<\/p>\n\n\n\n<p>Een gerecht dat gerust kan schitteren als voorgerecht, bijgerecht of lichte maaltijd. aubergine en spoel kort af onder koud water.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Verkruimel de feta. Hak de spinazie grof.<\/span><\/div><\/li><li id=\"wprm-recipe-10515-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Snijd de aubergine in plakken van ongeveer 1 cm dik. Gebruik een uitsteekvormpje of scherp mes om een rondje uit het midden van elke plak te snijden. Snijd niet te dicht bij de rand, zodat je stevige aubergineringen overhoudt die de vulling goed vasthouden.<\/span><\/div><\/li><li id=\"wprm-recipe-10515-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Leg de auberginerondjes op de bakplaat en hak het vruchtvlees van de aubergine fijn.<\/span><\/div><\/li><li id=\"wprm-recipe-10515-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Verhit olijfolie in een pan op middelhoog vuur. Voeg de fijngesneden auberginevulling en ui toe en bak deze 10-12 minuten tot ze zacht en licht gekarameliseerd zijn.<\/span><\/div><\/li><li id=\"wprm-recipe-10515-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Voeg vervolgens de verse spinazie, basilicum, oregano, een snufje zout en peper toe en bak nog 3-4 minuten tot de spinazie volledig geslonken is. Laat het geheel 10 minuten afkoelen.<\/span><\/div><\/li><li id=\"wprm-recipe-10515-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Doe het afgekoelde mengsel in een kom en voeg de verkruimelde feta, geraspte mozzarella en geraspte Parmezaanse kaas toe.
