Ik was een 18-jarig meisje, grootgebracht met Vlaamse boerenkost en ik had nog nooit iets pikants gegeten. Ik ging toen voor de eerste keer op rootsreis naar mijn geboorteland. Bulgogi was toen mijn redding: rijst, veel VLEES, lekker zoet en niet pittig. Een gerecht dat sindsdien een speciaal plekje heeft in mijn hart. \ud83d\ude42<br><br>Authentieke Zuid-Koreaanse bulgogi betekent letterlijk <em>\u201cvuurvlees\u201d<\/em> en dat bestaat uit mals biefstuk dat ultradun gesneden is en gemarineerd wordt in een zoete, hartige saus van sojasaus, sesamolie, knoflook, suiker, gember en Aziatische peer voor extra malsheid. Daarna kort gegrild of gebakken op hoog vuur tot het perfect sappig en licht gekarameliseerd is. Traditioneel wordt bulgogi geserveerd met <em>rijst, pittige ssamjang en kimchi<\/em>. Als je niet meteen beschikt over Koreaanse rijst en een rijstkoker zoals mij, dan kan je kiezen voor <strong>Tilda Pure Basmati<\/strong>. De geurige, lange korrels blijven mooi los en nemen de marinade van de bulgogi goed op. De rijst brengt een goede balans tussen de zoete, hartige en pittige smaken. Kook de rijst volgens de verpakking, laat even rusten en serveer warm bij de bulgogi. De geur alleen al doet je watertanden! Deze Koreaanse dipsaus maakt het gerecht en brengt alle smaken bij elkaar. De saus is een mix van <strong>doenjang<\/strong> (sojabonenpasta), <strong>gochujang<\/strong> (chiliepasta), honing, sesamolie, lente-ui en knoflook. Pittig, hartig en een beetje zoet.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">En dan mijn trots: <strong>homemade kimchi<\/strong>! Pittig, gefermenteerd en vol umami. Zoet, zout, pittig en fris tegelijk. Elke hap zit vol contrasten, texturen en aroma\u2019s. De perfecte balans tussen zoet, zout en umami. Iedereen stelt zijn eigen hapjes samen aan tafel: een beetje rijst, wat vlees, een lepeltje saus, oprollen en in je mond proberen te proppen zoals de Koreanen dit doen. Dat maakt het net extra gezellig.
